I have a plan to get a job in Antibes during the summer in July/August, staying for no more than 2 months. I expect to earn the minimum wage of €9.22 an hour, or maybe a little more (working in a bar/water park etc). I'm a 19 year-old student, and am Irish (so EU citizen). Just wondering whether I'll be liable to pay income tax or not?

Yes. A person resident and domiciled in the Republic of Ireland is liable to Irish income tax on his total income from all sources worldwide. You will self-assess at the end of the year.
