I am a US citizen, living in Florida now. I have the opportunity to take a pilot job in Nice, France. I'm trying to figure out the steps I would have to take to (1) move there, (2) how I get paid, (3) who I pay taxes to, etc. any info would be greatly appreciated.

You would get paid just like any other job: payroll deposit to a local bank.
You would be taxed in France. You would also need to file a US tax return and claim the Foreign Earned Income Exclusion, assuming you met the residency requirements.
The main concern here is a long-term visa with a work permit. It's usually up to the employer who makes the job offer to arrange this.
